Squash Casserole
Ingredients
- 2 cups cooked yellow squash, drained
- 1 can mushroom soup
- 1 onion, cut into small pieces
- ½ cup margarine (1 stick), melted
- 2 cups grated cheese
- 3 eggs, beaten
- Salt and pepper, to taste
- ½ cup crushed Ritz crackers
Preparation
- Preheat oven to 350°F (175°C).
- In a bowl, mix cooked squash, mushroom soup, onion, melted margarine, grated cheese, eggs, salt, and pepper.
- Grease or spray a baking pan with vegetable spray.
- Pour the mixture into the prepared pan.
- Sprinkle crushed Ritz crackers evenly on top.
Cooking
- Bake in the preheated oven for 25–40 minutes, until the casserole is set and the top is lightly browned.
Serving
- Serve hot as a side dish.
Tip: Ensure the squash is well drained to prevent a watery casserole.
