Spare Ribs

Ingredients

  • 2–3 lbs spare ribs (not baby back)
  • Whole red peppers (amount as desired)
  • Salt and pepper, to taste
  • Water (enough to partially cover ribs)

Preparation

  1. Wash the spare ribs and place them in a pot.
  2. Add whole red peppers on top of the ribs.
  3. Lightly season with salt and pepper.
  4. Add water so it partially covers the ribs (do not fully submerge).

Cooking

  1. Bring the pot to a boil.
  2. Reduce heat to medium-low and cook for several hours until ribs are tender.
  3. Allow the water to cook down almost completely—this helps brown the bottom.
  4. Do not stir during the cooking process.

Serving

  • Serve hot as a main dish.
  • Pairs well with mashed potatoes, baked beans, or cornbread.

Tip: Cooking slowly and letting the water evaporate gives the ribs a natural caramelized bottom.
