Spare Ribs
Ingredients
- 2–3 lbs spare ribs (not baby back)
- Whole red peppers (amount as desired)
- Salt and pepper, to taste
- Water (enough to partially cover ribs)
Preparation
- Wash the spare ribs and place them in a pot.
- Add whole red peppers on top of the ribs.
- Lightly season with salt and pepper.
- Add water so it partially covers the ribs (do not fully submerge).
Cooking
- Bring the pot to a boil.
- Reduce heat to medium-low and cook for several hours until ribs are tender.
- Allow the water to cook down almost completely—this helps brown the bottom.
- Do not stir during the cooking process.
Serving
- Serve hot as a main dish.
- Pairs well with mashed potatoes, baked beans, or cornbread.
Tip: Cooking slowly and letting the water evaporate gives the ribs a natural caramelized bottom.
