Shrimp-Rice Casserole
Ingredients
- 1 ¼ pounds shrimp, cleaned and cooked
- 1 large onion, chopped
- 1 tablespoon margarine
- 1 can mushroom soup
- ½ tablespoon lemon juice
- Dash of garlic salt
- Salt and pepper, to taste
- ¾ cup cooked rice
- ½ cup commercial sour cream
- ¾ cup grated cheese
- ½ green pepper, sliced
Preparation
- Cook and clean the shrimp.
- Sauté the chopped onion in margarine until tender.
- Make the sauce: combine mushroom soup, lemon juice, garlic salt, salt, and pepper.
- Fold the cooked rice and shrimp into the sauce.
- Fold in the sour cream.
Cooking
- Pour the mixture into a 1-quart buttered baking dish.
- Sprinkle grated cheese on top and decorate with green pepper rings (parboil green pepper for 2 minutes before adding).
- Bake at 325°F (165°C) for 30 minutes.
Serving
- Serves 6.
- Serve hot as a main dish or with a light side salad.
Tip: Parboiling the green pepper ensures it stays tender but retains some crunch and color.
