Shrimp-Rice Casserole

Ingredients

  • 1 ¼ pounds shrimp, cleaned and cooked
  • 1 large onion, chopped
  • 1 tablespoon margarine
  • 1 can mushroom soup
  • ½ tablespoon lemon juice
  • Dash of garlic salt
  • Salt and pepper, to taste
  • ¾ cup cooked rice
  • ½ cup commercial sour cream
  • ¾ cup grated cheese
  • ½ green pepper, sliced

Preparation

  1. Cook and clean the shrimp.
  2. Sauté the chopped onion in margarine until tender.
  3. Make the sauce: combine mushroom soup, lemon juice, garlic salt, salt, and pepper.
  4. Fold the cooked rice and shrimp into the sauce.
  5. Fold in the sour cream.

Cooking

  1. Pour the mixture into a 1-quart buttered baking dish.
  2. Sprinkle grated cheese on top and decorate with green pepper rings (parboil green pepper for 2 minutes before adding).
  3. Bake at 325°F (165°C) for 30 minutes.

Serving

  • Serves 6.
  • Serve hot as a main dish or with a light side salad.

Tip: Parboiling the green pepper ensures it stays tender but retains some crunch and color.
