Mawmaw "Pete's" Dumplins
Ingredients
- Self-rising flour (amount as needed)
- ½ cup plain flour
- ⅔ cup chicken broth (from boiled chicken, not too much fat)
- Additional chicken broth (to form dough)
- ½ cup milk
- Pepper, to taste
- (Optional) Thickening: milk + flour mix
Instructions
- Sift self-rising flour into a bowl and make a well in the center.
- Add ½ cup plain flour into the well (do not mix yet).
- Take out about ⅔ cup chicken broth. Pour half of it around the plain flour in the well.
- Work flour and broth together with your fingers.
- Add the rest of the collected broth, gradually working it into the remaining flour until the dough no longer sticks to fingers.
- Flour your countertop, roll dough out as thin as possible, and cut into strips.
- Drop strips into boiling chicken broth (without meat), seasoning with pepper.
- When the surface is covered with strips, wait until broth bubbles through before adding more strips (prevents sticking).
- Once all strips are in, add ½ cup milk and boil until dumplins are tender.
- If needed, thicken with a milk-and-flour slurry before serving.
