Lobster Chowder

Ingredients

  • ¼ cup chopped onion
  • 1 small garlic clove, minced
  • 1/8 tsp (pinch) cayenne pepper
  • 1 tbsp butter or margarine
  • 2 cans cream of potato soup (Campbell’s)
  • 3 oz cream cheese, softened
  • 1 ½ soup cans milk (or more, to taste)
  • 2 cups cooked, chopped lobster
  • 1 can (8 oz) whole kernel corn, undrained

Instructions

  1. In a large pot, sauté onion, garlic, and cayenne pepper in butter until fragrant.
  2. Stir in cream of potato soup, cream cheese, and milk. Blend well.
  3. Simmer for about 30 minutes, stirring occasionally.
  4. Add lobster and corn (with liquid), mix well.
  5. Heat through and serve hot.
